Birthday Bundt Cake

It’s my birthday! Today I officially turn 22, so of course – I decided to celebrate in style, and with lots of cake. I tried my hand at my first ever Bundt cake after being lured into buying such a pretty tin mold (such is my life) I opted to make a ‘celebration sponge’ which is just a basic vanilla sponge mix with sprinkles swirled into it to make a confetti style effect when you cut into the cake. I decided to decorate it with some chocolate frosting which I melted slightly and poured over the cake, and some silver balls and the flags for decoration.

Ingredients

To make a celebration bunt cake you will need:

standard bundt shaped tin
225g self raising flour
225g baking butter
225g caster sugar
4 eggs
coloured sugar sprinkles
frosting or icing sugar to taste for topping

The Method

Once you’ve weighed out your ingredients, mix everything together in the food processor, leaving the sugar sprinkles until the end for one final mix for five seconds, as you don’t want these to be chopped even smaller than they are!

Grease your bundt tin well and place in the centre of the oven for 40-50 minutes on 190C with the fan on. Once the cake is cooked through, leave it in the tin for at least ten minutes to cool slightly before you tip it out onto a wire rack to prevent it cracking.

For the frosting I melted a tub of Betty Crockers chocolate frosting for 30 seconds in the microwave to make it easier to pour over, and make sure it covered the centre hole too. Decorate with anything else you might like, enjoy!
