I’ve been seeing recipes for overnight oats popping up here there and everywhere over the past few months, and eventually curiosity got the best of me and I decided to give them a go for myself. I wasn’t too convinced about the thought of eating cold stodgy porridge, but I was left pleasantly surprised by it’s creamy texture and how surprisingly, you can actually make it a bit more interesting than just plain old oats.
I decided to incorporate some frozen fruit and raspberries into it as a topping, and made a simple chocolate oats mix, using 100g of oats, two dessert spoons of chocolate powder, 100ml of coconut milk, and added in a good old scoop of nutella just to be that little bit naughty.
Preparation done within minutes, I put it into the fridge to settle over night awaiting my cold porridge fate in the morning. Surprised at how well it had all soaked up, I decided it was best to leave it to room temperature along with some frozen fruits for my topping so it was at least slightly less freezing cold (plus it gave some time for my fruit to defrost a bit before turning into mush!) Half way through I decided to heat it up and pop it in the microwave for three minutes, as eating something so cold in winter did seem a bit odd, though I can see the appeal for summer.
I really enjoyed the oats, though I do think I would prefer them a bit sweeter next time, and would love to try something like honey and cinnamon with chopped nuts and apples on top! Are you a fan of overnight oats? Do you have a favourite recipe to share?
